Pumpkin Swirl Cheesecake Bars

25 Ginger Snaps, Finely Crushed
1/2 C. Peanuts, Finely Chopped
1/4 C . Butter, Melted
32 oz. Cream Cheese, Room Temp
1 C. Sugar, Divided
1 t. Vanilla
4 Eggs
1 C. Pumpkin
1 t. Cinnamon
1/4 t. nutmeg
Dash Clove

Heat oven to 350. Mix Crumbs, Nuts, and Butter. Press into the bottom and 1 inch up the sides of 9x13 in. cake pan. Beat Cream Cheese, 3/4 C. Sugar, and Vanilla with a mixer until well blended. Add Eggs 1 at a time. Beat after each just until blended. Remove 1 1/2 C. of batter. Stir in remaining Sugar, Pumpkin, and Spices into remaining batter. Spoon half Pumpkin Batter onto Crust. Top with spoon fulls of half plain batter. Repeat layers, Swirl with knife.Bake 45 Minuets or until center is almost set. Cool completely. Refrigerate 4 hours.

I skiped the nuts. Also used Pumpkin Pie mix instead of Pumpkin and spices. Turned out good. Doran complained that it was to pumpkinie. Whatever that means.

Cream Cheese Clouds

1 Can Buttermilk Biscuits
1/2 C. Sugar
1 T. Ground Cinnamon
8 oz. Cream Cheese, Room Temp
1/4 C. Butter, Melted

Heat oven to 350. Separate dough into 12 biscuits. Press or roll each into 1/4 inch thickness. Mix Sugar and Cinnamon in shallow dish. Dip Cream Cheese cubes in melted Butter, then roll in Cinnamon Sugar. Place 1 cube in the center of each dough circle. Gather up the sides of dough to enclose filling. Press edges to seal dough together. Place seam side up on lightly greased muffin pan. Drizzle with any remaining Butter, sprinkle with Cinnamon Sugar. Bake 15 minuets. Serve Warm.

I divide the recipe in 4 because they don't taste as good cold. Also good with blueberries on the inside.

Chocolate Peanut Butter Frosting

$9.50

2 C. Powder Sugar
1/2 C. Cocoa
1/2 C. Butter
Milk
Peanut butter

Mix together all ingredients except Peanut Butter. Add Peanut Butter to taste. Adjust as needed.

I love this Frosting

Sour Cream Chicken Enchiladas

4 Chicken Breast, cooked and diced
2 cans Cream of Chicken Soup
2 cans Green Chilies
1 Pint Sour Cream
10-12 Flour Tortillas
3 C. Cheddar Cheese
1/2 Bunch Green Onions

In sauce pan Mix Chicken, Sour Cream, Soup, and Chilies. Heat though over med heat. Heat Tortillas. Place 2 large spoonfuls of sauce in the middle of each Tortilla. Roll. Place in greased casserole dish. Pour remaining sauce over rolled tortillas. Sprinkle with Cheese and Green Onions. Bake at 350 for 30 Min.

Another favorite. This can also be made ahead.

Hawaiian Chicken

5 lb Chicken
1 C. Soy Sauce
2 C. Water
1/2 C. Green Onion
1 Clove Garlic
2 T. Fresh Ginger
1/2 C. Brown Sugar
1/4 C. Honey

Peel and slice Ginger. Put all ingredients except Chicken in large pot. Boil 2 min. Add Chicken. Cook for 1 1/2 hours. Simmer until Chicken is fall off the bone done. Remove Ginger. Serve over Rice.

Chicken Poppy Seed

4 Chicken Breasts
Garlic Powder, to taste
1/2 C. Butter
1 Med tube Sour Cream
1 Family size can Cream of Chicken Soup
3 t. Poppy Seeds
3 sleeves Ritz Crackers, Crushed

Cube Chicken. Cook in Butter and Garlic Powder. When Chicken is fully cooked add Sour Cream, Soup, and Poppy Seeds. Heat. Stir in 1 1/2 sleeves Ritz. Pour in 9x13 cake pan. Top with remaining Ritz. Bake at 350 until bubbly around the edges.

This is one of my favorite comfort foods. It can also be made a head and put in the fridge.

Dairy Delicious Dip

Aprox. $8

8 oz. Cream Cheese, room temp
1/2 C. Sour cream
1/4 C. Sugar
1/4 C. Brown Sugar, packed
1-2 T. Maple syrup

In a small mixing bowl, combine Cream Cheese, Sour Cream, Sugars, and Syrup to taste. Beat until smooth. Chill until serving. Serve with fruit

Cream Cheese Chicken Soup

Serves 4-5

1 lb Chicken, cooked and diced
1 Onion, diced
1-2 T. Butter
3 C. Chicken Broth
4-5Carrots, sliced
1 C. Celery, chopped
4-5 Potatoes, diced
1 C. Milk
4 T. Flour
8 oz. Cream Cheese, room temp
Salt
Pepper

Saute Onion in butter. Put onion in pot and add Chicken Broth, Carrots, Celery and Potatoes. Add more broth to cover vegges. Bring to a boil, Simmer until veggies are tender(10 min). When Veggies are tender, mix Flour and Milk. Add to soup. Add Cream Cheese to soup little pieces at a time and stir until melted. Add cooked Chicken and Heat through. Season with Salt and Pepper to taste.

Doran does not like soup what so ever but he liked this one. I think I will change the carrots to corn and the celery to green beans next time.
